Original visual accompanying the guide: Butter Package Sizes: Adapt a Recipe Without Guessing Sticks
Start with the package mass
Recipes and packages do not share a universal stick size. If your package says 250 grams and a US recipe asks for two sticks, measure approximately 226.8 grams. Using the full package adds about 23.2 grams. A wrapper divided into blocks can help with rough portions, but a scale makes the comparison explicit.
Work out the fraction you need
Divide the recipe's required grams by the package's total grams. For 226.8 grams from a 250-gram package, use about 0.907 of the package. Conversely, 100 grams is about 0.882 US sticks. Keep a few digits while calculating and round the final kitchen measurement to suit the scale rather than rounding every intermediate conversion.
Check the ingredient description as well as the amount
Salted butter, unsalted butter, spreadable blends and reduced-fat spreads can behave differently. Equal weight does not make them interchangeable in pastry or cakes. Read both the ingredient list and recipe notes. For a recipe that specifies a brand or butter style, retain that instruction while converting the amount. Package arithmetic solves portion size, not differences in water or fat content.
