Identify the convention before comparing answers

Some modern product instructions permit active dry and instant yeast to be substituted at equal weight. Other baking references use a proportional reduction for instant yeast. A calculator can therefore give different results without changing the input quantity if its conversion convention differs. The GreenCalc form names the selected convention rather than silently presenting one as universal.

Read both the product and the recipe method

Under the equal-dry profile, seven grams active dry gives seven grams instant. Under the alternative profile, active dry is represented by 1.25 parts for every one part instant, so seven divided by 1.25 gives 5.6 grams instant. These calculations describe their respective models. Follow a specific product's replacement instructions when it gives them, including any preparation requirements.

Do not expect the same clock time

Equal calculated amounts do not guarantee equal rise times. Dough temperature, recipe composition and yeast product affect fermentation. Use the recipe's dough-development cues rather than treating the converted number as a timer setting. Nutritional yeast and chemical leaveners are outside this conversion. If the original recipe names a special yeast product, check whether an ordinary product is a supported replacement before using either profile.

Work through your own quantities with the Yeast Converter. Check the ingredient basis or conversion convention in the form before using its result.
